Yummy Peanut Butter Oatmeal Chocolate Chip Cookies
Confession: I love baking. And luckily for me, my friends love baked treats! In my last year of med school I started baking every Sunday, and my roommate and I would have our friends over to watch whatever was on HBO. It gave me a creative outlet but what I loved the most was how it brought my favourite people together for an evening. Here’s a cookie recipe that’s gluten free, dairy free but yummy-full!
Recipe:
½ c natural peanut butter (or other nut butter)
2 tbsp melted coconut oil
2 tbsp honey
3 tbsp coconut sugar
1 egg*
1 tsp vanilla extract
1 ¼ c rolled oats
½ tsp baking soda
dash of salt
1 cup mini dark chocolate chips
In a small bowl mix oats, baking soda and salt. Set aside.
In a large bowl cream nut butter, coconut oil, sugar and honey. Beat in egg and vanilla extract. Add dry ingredients and mix well. Stir in chocolate chips and refrigerate for 30 min. This firms up the dough making it easier to form into cookies.
Preheat oven to 350 degrees F and line a baking sheet with parchment paper. Form spoonfuls of dough into balls and flatten slightly. Arrange on baking sheet an inch or so apart. These cookies don’t really spread so you don’t need them to be far apart.
Bake for 8-10 minutes or until the edges are golden.
* I haven’t yet tried it, but a flax egg should be a good replacement if you want to make it vegan.
